The Ultimate Paleo, Keto, Vegan, Gluten-free Bread

Ingredients:

  • 240 g whole golden flaxseeds

  • 40 g psyllium husk powder

  • 2 tsp baking powder

  • salt

  • 320 ml hot water

Equipment needed:

  • electric coffee/spice grinder

  • large bowl

  • spoon

  • baking tray

  • baking paper

  • oven

Prep. time: 10 minutes

Baking time: 50 minutes

Instructions:

  1. Preheat the oven to 180 Celsius.

  2. Blend flaxseed with the electric coffee grinder until floury. Transfer the flaxseed meal to a large bowl.

  3. Add the remaining ingredients and stir it with a spoon.

  4. Pour in the hot water and mix with the spoon, then knead it with your hands once it’s cool enough to handle.

  5. Transfer the bread dough to the prepared baking tray (lined with the baking paper) and shape it into a bread loaf .

  6. Wet the top of the dough. And place the tray into the oven for about 50 minutes.

  7. Once golden brown, transfer the bread to a wire rack to cool completely before slicing.

Notes: you can flavor the bread to your liking by adding fresh or dried herbs, spices, olives, sundried tomatoes etc.

Keto, Gluten-free Cinnamon Rolls

Ingredients:

  • 220g shredded mozzarella cheese

  • 57g cream cheese (I use the brand Philadelphia)

  • 65g almond flour

  • 1 teaspoon baking powder

  • 1 tablespoon ground flax meal

  • 1 tablespoon softened butter

  • 1 tablespoon ground cinnamon

  • a big pinch of ground cardamom

  • 2 tablespoons of Xylitol or Monkfruit

  • 2 tablespoons of pecans, or almonds chopped

Prep. time: 10 minutes

Baking time: 15-20 minutes

Instructions:

  1. Preheat oven to 280 Celsius.

  2. Combine shredded mozzarella and cream cheese in a sauce pan and warm it up while stirring until completely melted.

  3. Add the melted cheese to the almond flour, baking powder and ground flax meal mixture.

  4. Mix the dough well with a spatula, until you have a soft ball.

  5. Let it sit and cool down a bit.

  6. Between two parchment paper roll the dough into a rectangle (about 3mm thick).

  7. Brush the softened butter on the dough all the way to the edges.

  8. Combine the cinnamon, cardamom and sweetener in a small bowl and sprinkle on top of the butter.

  9. Top with chopped nuts.

  10. Roll up the dough tightly.

  11. Cut the log into 8 equal portions and place them on a baking dish.

  12. Bake the rolls until golden brown.
